<p><strong></strong>Serves 4</p>
<p>1 1/4 cups Bean Appétit Flour Blend (page xiii)<br />
1/2 cup packed light brown sugar<br />
1/2 teaspoon baking soda<br />
Pinch of ground cinnamon<br />
3 tablespoons butter, softened<br />
1 tablespoon honey<br />
2 tablespoons water<br />
1 teaspoon vanilla extract<br />
1/4 cup chocolate chips, melted<br />
1 large banana, peeled and cut into 1/4-inch slices</p>
<p>Preheat the oven to 350°F.</p>
<p>Sing the popular camp song “The Ants Go Marching” while combining the flour blend, brown sugar, baking soda, and cinnamon in a bowl. Add the butter and stir until combined. Add the honey, water, and vanilla and mix until the dough is sticky. Press the dough flat on a parchment-lined baking tray. Chill in the freezer for 5 minutes.</p>
<p>Pack the dough into a ball and roll it out on a lightly floured surface until the dough is about 1/4 inch thick. Use your favorite cookie cutters to make at least 8 graham crackers. Poke holes all around the top of the crackers with a fork.</p>
<p>Bake for 12 to 15 minutes, until golden brown. Roll around like a banana on the floor while chanting “Go bananas!” Remove the graham crackers from the oven and let them cool.</p>
<p>Spread the melted chocolate on a graham cracker. Add a layer of banana slices on top. Top with another graham cracker. Do you want s’more? Make another batch!</p>

<p>Serves 4</p>
<p>A taste of the tropics!</p>
<p>2 teaspoons lime juice<br />
1 teaspoon honey<br />
1/4 teaspoon ground cumin<br />
Pinch of garlic powder<br />
Salt and pepper<br />
2 boneless, skinless chicken breasts<br />
1 1/2 cups water<br />
1 pineapple, cut into 4 (1-inch thick) round slices<br />
1/4 cup cream cheese<br />
1/4 cup packed spinach leaves<br />
8 dried figs</p>
<p>You will also need:<br />
8 skewers</p>
<p>Preheat the oven to 400°F.</p>
<p>Pretend you’re putting on sunscreen before you combine the lime juice, honey, cumin, garlic powder, and salt and pepper in a bowl. Place the chicken in a small baking dish. Pour the lime juice mixture all over the chicken, making sure the chicken is covered, then add the water to the baking dish. Place in the oven and bake for 18 to 20 minutes, until the chicken is thoroughly cooked. While the chicken is baking, pretend to dip your toes in the ocean!</p>
<p>Slice each chicken breast into 4 long pieces. Push a skewer lengthwise through each chicken piece to form tree trunks. There should be 8 chicken skewers.</p>
<p>Stick 2 chicken skewers into each pineapple slice. The pineapple is your island. Use the cream cheese to stick the spinach leaves onto the chicken tree trunks. Place 2 figs under the trees for coconuts!</p>
