Lazy Girl Berry Cobbler

Many Southern grandmothers have a version of this simple cobbler in their recipe boxes. It may just be the quickest way to an old-fashioned farm staple. I first heard it referred to as Lazy Girl Cobbler in Nathalie Dupree’s kitchen. Her kitchen is a Southern woman’s sanctuary. It’s always warm, inviting, and never ceases to be a learning place for the hungry.

½ cup unsalted butter
1 cup Southern All-Purpose Flour (see page 7)
1 cup packed light brown sugar
1 tablespoon baking powder
¹⁄8 teaspoon salt
1¼ cups buttermilk
4 cups fresh blackberries

Preheat the oven to 375˚F.

In a 10-inch cast-iron skillet, melt the butter in the oven while it is preheating. Once the butter is melted, remove the skillet from the oven.

Meanwhile, whisk together the flour, brown sugar, baking powder, and salt in a medium mixing bowl. Whisk the buttermilk into the flour mixture.

Pour the batter over the melted butter in the hot skillet. Sprinkle the blackberries evenly over the batter.

Bake for 50 minutes. Serve hot, warm, or at room temperature.

Roasted Tomatoes and Parmesan Grits

I adore roasted tomatoes and I practically live for creamy grits, so one fateful day, I combined my two loves. If I do say so myself, it was a stroke of genius. The two complement each other in total harmonies of texture, flavor, and color.

3 cups chicken broth
2 cups heavy cream
1 cup quick grits
2 cups grape tomatoes
1½ teaspoons olive oil
1 tablespoon balsamic vinegar
¼ cup plus 2 tablespoons shredded
Parmesan cheese
Freshly ground black pepper

Preheat the oven to 400˚F.

Bring the chicken broth and heavy cream to a simmer in a large heavy saucepan over medium-low heat, about 5 minutes. Add the grits. Stirring often, cook for 20 minutes, until the grits are no longer crunchy.

While the grits are cooking, cut the tomatoes in half and place on a rimmed baking sheet. Toss the tomatoes in olive oil and arrange in a single layer. Bake for 15 minutes. Add the balsamic vinegar and toss.

Remove the grits from the heat and stir in the Parmesan cheese. Serve the tomatoes over the grits. Sprinkle with the pepper before serving.
